1/2 cup cashews
1 cup water
6 ice cubes (about 1 1/2 cups)
1 cup espresso (or strong coffee), chilled
1 to 2 tablespoons vegan maple or chocolate syrup
1) In a blender, finely grind cashews, then add water and blend on high for five minutes. Pour into a container and chill in refrigerator.
2) Once the cashew cream is cold, grind in ice cubes. Add coffee and syrup and blend for a few seconds.
This drink is refreshing, but quite rich, so keep the portions smallish. However, if you want it even more rich, don't grind in the ice, just put a cube or two in each glass. Serve in frosted mugs.
