8-10 ripe medium sized strawberries
3/4 cup oats (either quick cooking or regular)
1 cup flour
1 teaspoon salt
1 tablespoon sugar
1 tablespoon baking powder
1/4 cup vegetable oil
1 14 cup soy milk
1 teaspoon vanilla extract
First, heat up your waffle iron.
Remove the green tops of the strawberries and puree them either in a blender or a food processor.
Pour oats into a large bowl and dampen them with a bit of water. Let them sit for a minute to soften. Add flour, salt, vegan sugar, baking powder and mix. Add oil, 1 cup of soy milk, vanilla and strawberry puree and stir till smooth. Add remaining soy milk to thin the mixture.
If your waffle iron is non-stick then no cooking spray is necessary.
