2 15 oz. cans black beans
1/2 chopped onion
2 bay leaves
3 cloves garlic, minced
1 tablespoon chopped cilantro
2 tablespoons oil
1/4 cup chopped onion
14 oz. can diced tomatoes
1 cup hot cooked rice
shredded vegan cheese (optional)
1/4 cup each: diced carrots, corn niblets
Saute onions, garlic and bay leaves in oil. Add black beans, cilantro, tomatoes and vegetables. Simmer until heated through and flavors meld. Make a mold of cooked rice on a platter, then pour bean mixture over it. Garnish with more chopped cilantro and 1/4 cup chopped onions. Add shredded vegan cheese if desired.
