1 eggplant
2 tbsp cocnut oil
black pepper
1/2 cup tahini
juice of 1 lemon
3 gloves garlic
Preheat the oven to 350 Farenheit
Slice the eggplant lengthwise into 1/4 inch slices
Place the eggplant in the oven for 15 to 20 minutes, or until the eggplant is golden and soft
Let the eggplant cool for a few minutes
In a food processor mix all ingredients and process until smooth and creamy
