1. Place carrots in the microwave and cook until fork tender, about 4-5 minutes.
2. In a non-stick skillet over medium-high heat, place tofu and allow to brown, add carrots and peas.
3. Add salt, and spices, stir to distribute spices evenly, before adding diced tomatoes, or salsa, stir well.
4. Add vegetable broth, cook until all liquid evaporates, then add lemon juice and parsley, stir.
5. Serve over pita, tortilla, or in a lettuce wrap.
