2 cans black beans rinsed well and drained
1 1/2 cups frozen corn
1 can small corn cobs
1/2 cup green onions diced
3 tomatoes chopped
1 each red, yellow, orange bell peppers
1/2 cup green olives and pimentos
2 avocados cut in chunks
1/4 teaspoon basil
Salt and black pepper to taste
2 cloves garlic minced
1 teaspoon to 1 tablespoon sugar to taste
1/4 teaspoon onion powder
1/4 teaspoon paprika
2 tablespoons lime juice
1 teaspoon lime zest
1 tablespoon olive juice
1 tablespoon virgin olive oil
1. Add beans corn onions tomatoes olives and pimentoes, peppers corn cobs in large serving bowl
2. Whisk together garlic basil sugar salt and pepper onion powder paprika olive oil, juice from olives Lime juice and zest in small bowl
3. Add to serving bowl mix gentle
4. Top with avocados before serving.
