--> Crust / bottom layer:
1.1/4 cup wheat flour
1/3 cup brown sugar
1/3 cup of nuts (pecan or almonds), shredded
1/4 tsp salt
1 pinch of baking soda
1/4 tsp of vanilla powder or extract
1/4 soy milk
1/3 canola oil
Strawberry mousse / middle layer:
2 cups of Cashew nuts (soaked 8-12 hours)
1 can of cooconut milk (400ml)
3/4 cup of flour
1/4 cup corn startch
1/2 cup of soy milk
1/4 brown sugar
1 tsp of vanilla powder
360 g strawberries
3 tsp of lime juice
1.1/4 tsp salt
--> Top layer
1/2 cup of red fruit juice (strawberries, raspberries, etc..)
1/2 lb of strawberries
1/2 cup water
3 Tbsp of agar-agar
2 Tbsp of sugar
1/4 tsp pectin
Bottom layer Crust:
1. Mix all ingredients.
2. Coat the bottom of a baking pan. Bake for 10 min at 350 deg F.
Middle layer:
1. Reduce the cashew nuts into a paste using a food processor.
2. Mix all ingredients with the cashew nut paste.
3. Pour over the bottom layer and bake fo 50-60 min.
Top layer:
1. Bring to a gentle boil under low heat the water and the agar-agar until complete dissolution.
2. Add juice, sugar and pectin. Continue to heat for few minutes. Remove foam if there is any
3. Pour onto the middle layer
4. Let cool and refregirate for one hour
