1 1/2 cups Organic brown rice
1 (13.5 oz) can Unsweetened Coconut Milk- equals about 1 2/3 cup
2 1/3 cups water
1/8 tsp Sea salt (or any salt)
3 Tbsp unsweetened shredded coconut
Put all ingredients together in large saucepan: rice, coconut milk, salt, coconut, water.
Bring to boil on high for 5 min, stirring occasionally.
Turn on low and cover.
Cook for 45 minutes OR until all liquid is absorbed.
