Vegan Chili

Ingredients: 

1/2 an onion

2 cloves garlic

2 big cans diced tomatoes

2 cups dark red kidney beans (or 2 cans)

2 cups black beans (or 2 cans)

1 1/2 cups corn kernals

1 Tablespoon salt (more to taste if needed)

1 Tablespoon black pepper

2 teaspoons chili powder

1/8 cup Olive oil

 3 cups water

 

 

 

Directions: 

Dice onion and mince garlic. Put in large pot with oil. Add salt,pepper and chili powder. Cook on medium high heat until brown. Pour in tomatoes, black beans, kidney beans and corn with all juices. Pour in water and boil on high heat for about 10 mins or until the tomatoes stay on the top, add more salt and pepper if needed.
