Buckwheat Pancake/Waffle Batter

Ingredients: 

2 tablespoons ground flaxseeds

1/2 cup buckwheat flour

1 teaspoon baking powder

1/8 teaspoon salt

1/4 teaspoon cinnamon

4 teaspoons sugar

1 cup non-dairy milk

2 teaspoons vanilla extract

Non-stick cooking spray

Toppings of choice

Directions: 

1) Mix the ground flaxseeds with 6 tablespoons of warm water. Set aside.

2) Combine the buckwheat flour, baking powder, salt, cinnamon, and sugar in a mixing bowl using a wisk. 

3) Add the non-dairy milk, vanilla extract, and flaxseed mixture to the dry ingredients. Stir to combine.

4) Cook in a pan for pancakes or on a waffle iron for waffles, using the non-stick spray. Serve with toppings of choce, such as banana slices, maple syrup, or peanut butter.
