Seitan was one of the first foods that I seriously loved as a vegan. What other meat analogue is as savory, chewy, and, well, meaty? Seitan is the perfect addition to most any dish (except for a chocolate cake but you know) and is surprisingly easy to make. If you're nervous about experimenting with it, don't be.
