2 cups all purpose flour
1 cup demerera sugar
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice
1 sweet potato, grated
1/2 zucchini, grated
1/2 cup neutral tasting oil
3/4 cup non dairy milk or apple sauce
1/2 cup raisins
1/2 cup rolled oats
1/2 cup chopped nuts
Preheat oven to 340F (170C) and line a 9 inch square tin or 11 inch diameter round tin
Mix flour, sugar, salt, baking powder, baking soda and cinnamon and then add the shredded veggies, oil and milk to the dry ingredients and mix by hand.
Fold in the nuts, raisins and oats.
Put the mix into the cake tin.
Bake for 20 minutes and then raise the temperature to 375F (190C) and bake for 25 minutes or until a knife comes out clean when inserted in the center.
