Old Fashioned Blueberry Cobbler
1 cup flour
1 cup whole wheat flour
1 teaspoon baking powder
1 cup sugar
1 teaspoon salt
2 cups blueberries
1/2 cup brown sugar
1 teaspoon vanilla extract
2 tablespoons lemon juice
1 teaspoon cinnamon
1 1/2 cups nondairy milk (I use soy)
1/2 cup canola oil
1. Preheat oven 350 degrees F and grease a large cake pan. Combine flours, baking powder, sugar and salt in large bowl.
2. In a separate bowl, microwave blueberries, brown sugar, vanilla, lemon juice, and cinnamon for about 2 minutes (5 minutes if using frozen blueberries).
3. Mix milk and oil into the dry ingredients until smooth. Fill pan about 1/2 full of dough, then layer blueberries on top. Next, cover with the remaining dough. Bake for 45 minutes.

SO HOW'D IT GO?
I made this last night. It is AMAZING!!! i just had some with coffee for breakfast.
I used 3 cups of frozen blueberries and plain sugar because I didn't have brown. I added a little more cinnamon and vanilla and some agave syrup to compensate for the extra blueberries. I also had to use all plain flour because I didn't have any wheat and one tablespoon of red wine vinegar because I didn't have any lemon juice.
I'm so making this again.
P.S. Why is this under Rice and Grains?
