Healthy Variety Quinoa with Veggies

What you need: 

1 cup cooked quinoa
1/2 cup low sodium vegetable-blend juice
1/3 cup vegetable broth
1/4 cup carrots
1/4 cup corn
1/4 cup peas
1 teaspoon extra virgin olive oil

What you do: 

I use all frozen vegetables in this recipe.
1. Put all ingredients into a microwave safe bowl with lid. Cook 5 minutes on high, or until heated through. Remove from microwave.
2. Stir, cover, let sit for 5 minutes or until quinoa is soft. Stir and enjoy
