Triple Berry Summer Pie

What you need: 

2 prepared vegan pie crusts
2 cups strawberries, quartered
1/3 cup blueberries
1/3 cup blackberries
3 tablespoons agave nectar
1/2 cup sugar
1/3 cup cornstarch
Cinnamon
Vegan butter Pecan Topping
1/4 cup vegan butter
1/4 cup packed brown sugar
1/4 cup pecans

What you do: 

1) Preheat oven to 375 degrees Fahrenheit.
2) Mix strawberries, blueberries, blackberries, agave nectar, sugar, and cornstarch. Pour this mixture into the first pie crust.
3) In a small bowl, mix butter and brown sugar for topping until well blended. Add pecans and stir a bit more. Spread pecan topping evenly over the berry mixture.
4) With the second pie crust, do as you wish. I chose to make a lattice top, and it worked beautifully. Coat the top crust with vegan butter and sprinkle with cinnamon. Bake for around 25 minutes or until the top begins to tan. Honestly, I completely eyeballed it. Let cool for 10 to 15 and enjoy!
