Healthy "Cookie" Burgers
1/2 cup ground up oatmeal (I grind a packet of plain instant oatmeal)
1/2 cup cooked white beans (Great Northern or other white bean)
1 heaping tablespoon nut butter (I use natural peanut butter, but any nut butter or tahini would work)
1 heaping tablespoon natural jelly (I use grape jelly without high fructose corn syrup)
1 tablespoon of ground flax seed
Cooking spray or oil Optional Extras for Nutrition:
nutritional yeast
wheat germ
brewer's yeast
kelp powder

Play with the proportions a bit for taste and consistency. Mine was easy to form into patties that did not stick to my fingers.
1. Put uncooked oatmeal in the food processor to make a powder. Measure out 1/2 cup and set aside. Save the remainder for another recipe.
2. Put your white beans in the food processor to mash them up. If you use canned, be sure to drain off the excess liquid. (I used dried and cooked beans for this recipe.) Transfer beans to mixing bowl.
3. Mix mashed beans into the oatmeal, then mix in your nut butter and jelly, and then the flax seed meal and other optional goodies.
4. Form into 4 little balls and then press into patties.
5. Slightly spray or oil a skillet and heat over medium-high head (you don't need a lot of oil for this). Toast the patties until golden on each side.
*Another name could be a peanut butter and jelly burger. I ask my son if he wants a cookie burger and he comes running! He is NOT a good eater, and this is a great way to get some extra protein in him! He will not eat beans on their own merit. He ate an entire burger today.
Source of recipe: My one year old is so very picky, but seems to like anything that resembles or is called a cookie. I came up with this to get something healthy in him without him realizing it.
SO HOW'D IT GO?
Perfect for younger kids! Got my bean-hating brother to eat them and he had no idea lol! Made about 5 patties, though they were more slider size than burger. Raspberry jelly seemed to work fine. Added a pic above
I just realized I have never reviewed these....They are Good, I used Sunflower seed butter, and no jelly....added the nootch.....they were more of a "savory-cookie" without the jelly...my 2 year old ate them up!
