Green Beans with Shallots and Walnuts
1 pound green beans, washed and ends removed
2 shallots, thinly sliced
1 tablespoon olive oil + 1 1/2 teaspoons for dressing
1 tablespoon mustard
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
pinch salt and pepper
1 cup walnuts, crushed
1. Blanch beans in boiling water for about 7 minutes. Drain the green beans and put them in a medium sized bowl to let them cool a bit.
2. In a frying pan, place shallots and 1 tablespoon olive oil. Cook shallots until browned.
3, To make the dressing, in a bowl combine mustard, maple syrup, olive oil, and apple cider vinegar and whisk them together. Mix in salt and pepper.
4. Add the shallots and walnuts to the green bean bowl, pour the dressing over it all and toss. Serve it up!

SO HOW'D IT GO?
Amazing! I served it cold, and sub-ed walnuts for sunflower seeds (which I roasted a bit in light olive oil). It was a hit!
I actually added some balsamic vinegar to the dressing when making it this time, and it turned out great. ;)b
