Brussel Sprout Heaven!
1/2 pound brussels sprouts, ends trimmed and halved (depending on size)
1/2 head cabbage (red or green), chopped
handful grape or cherry tomatoes, halved if large
olive oil to coat veggies
salt and pepper, to taste
2 tablespoons balsamic or other vinegar
1. Preheat oven 425 degrees Fahrenheit. Place brussel sprouts, grape tomatoes and cabbage on a baking sheet and toss with oil, salt, and pepper.
2. Bake for 15 minutes, flip and turn, then bake for another 15 minutes. Keep an eye on it so you don't over cook the veggies. You want the cabbage and brussel sprouts to be slightly browned and the tomatoes to be shriveled.
3. Toss with more salt and pepper, balsamic vinegar or whatever seasoning you desire. Braggs would be good.

So easy and delicious. I made this with all 3 veggies from our garden, how cool is that?!?!?!
I served it as a main dish over quinoa with home made bread. Doesn't get any better. Thanks for the great idea!

This was really good. I used apple cider vinegar because I do not have balsamic. Also, I omitted the cabbage since I was out. The tomatoes were my favorite part of this dish but it was all good. It is easy to make too.
I loooooooove brussels and I am totally making this tonight! Luckily, I have everything on hand. :)
