Zesty Spinach, Mushroom and Tomatoes
1 large bunch spinach or other green leafy vegetable.
1 large or 2 small tomatoes, diced thick
5 to 6 button or crimini mushrooms, chopped
1/2 small onion, diced
2 to 3 cloves garlic
1 tablespoon olive oil
1 tablespoon fresh oregano, finely chopped or 1 teaspoon dried
1/4 lemon
A pinch of salt, if desired
1) Heat oil in skillet on medium heat. Add onion and cook until translucent. Add garlic, tomato, mushrooms and oregano. Stirfry 2 minutes or until mushrooms reach desired tenderness. Add spinach and cook till just wilted, a few seconds. Squeeze lemon over vegetables and serve. Goes great with anything.
Source of recipe: I make this as a side dish based on the lemon spinach pies my stepdad makes. More of the tasty filling and no need to make pastry!
