Grilled Tofurky Cheese Sandwich
2 slices whole wheat bread
2 slices vegan cheddar cheese
3 slices tomato
4 slices "turkey" vegan lunch slices (I use Tofurky)
Spinach, to taste
Vegan butter spread
Garlic and all purpose seasoning, to taste
1) Spread the vegan butter on 1 side of each bread slice.
2) Turn stove top on medium- low heat and place a minimal amount of garlic and all-purpose seasoning right onto the frying pan. Place a buttered bread slice over the seasoning and begin to build the sandwich. Vegan cheese, "turkey", spinach, tomato, and the other slice of bread. Once the first side has evenly cooked, carefully flip to cook the other side and then you are done and ready to eat.
Quick and simple.

Good idea. I left out spinach (that's my "to taste," haha) and sliced some Daiya for the cheese. The tomato definitely adds something extra, and it's a good use of tofurky. Some of the seasoning on the pan got burnt, but it seasoned the bread well.
