Cabbage and Noodle Melt

What you need: 

2 onions, sliced
3 garlic cloves, minced
2 tablespoons vegetable Oil
2 green bell peppers
1 head cabbage
1/2 teaspoon paprika
1/4 cup soy sauce
2 cups cooked noodles
1/3 cup margarine
1 cup vegan parmesan (or 1/2-1 cup nutritional yeast)

What you do: 

1. Saute onions and garlic in vegetable oil until onions are soft. Add peppers and saute 4 more minutes.
2. Add cabbage and seasonings, reduce heat to love, cover and cook until cabbage is soft. Stir in noodles, mixing well. Pour into serving bowl.
3. Melt vegan margarine and parmesan/nutritional yeast in small saucepan. Pour over cabbage and noodles.

SO HOW'D IT GO?

It's so easy yet so yummy. It reminds me at a dish my mom used to cook when I was little.

I used only 1 tbsp of oil, skipped the margarine, and added more soy sauce to taste. This will be printed and comes in my meal planning binder.

This was delicious!
We used only one large onion and one red bell pepper.
We also used nutritional yeast instead of parm.
YUM. I'm a little surprised that it was that good.

This was good!  I tried to stick closely to the recipe but failed as usual.  I used less onion and red peppers while substituting concentrated veggie broth for the soy sauce.  I also added some seitan chunks.  It all tasted great!

I had no idea what type of paprika to use so I busted out my Hungarian Half Spice.  Zesty!

Only 4 stars....!?!?!  Really?!?!?!  I apologize for being dramatic, but OMG!  This was amazing!  Its so simple, but so delicious!  I think that I can honestly say, this is my favorite thing I've made from VW so far.  I wish I hadn't shoveled all of it into my fat face last night, because I want some right now.  Thank you so much!  I love it.  (sorry for being a spaz)

Wonderful, deee-licious! I had one of those packaged cut up cole slaw with different kinds of cabbage and carrots that was past expiry date and instead of throwing it out I made this recipe. It is so so good. I'm eating as it is without the noodles. I used a red pepper and then with the cabbage mix it is very colorful. Very easy and quick to make. Oh - I also took it off the stove while the veggies still had a bit of crunch....yum yum.

this was sooo good. I ate 2 bowls full.  I don't like vegan permesean so I used nutritional yeast flakes. I will be eating this for lunch tomorrow too!

This was amazing and will now become part of our regular rotation. It's easy to make and you can use different veggies for variety. We added a bit of broth to the sauce too and saved some of the parm (nooch & ground almonds) to sprinkle on top. Then we sprinkled more directly in our mouths, yum!

I really, really liked this.  I have been craving cabbage lately and loving vegan parmesan.  This hit the spot.  My husband didn't like it as much and me but my 9.5 month old son really enjoyed it too.  I had a bowl of leftovers for breakfast the next day.  Super yummy!!!

This was pretty good recipe!  I added 1 can rinsed and drained white beans and used a red bell pepper and whole wheat pasta.  What's especially great is that I have lots of leftovers for the week!  Thanks!
