The World's Best French (hot) Fries

What you need:

oil, for frying (corn or canola are good choices)
6 Hungarian yellow banana peppers
2 or 3 medium-sized potatoes, cut to fries
salt, to taste

What you do:

1. Cut tops off of the banana peppers. Put about 1/2 -3/4" oil in fry pan. Fry the peppers until they're brown on both sides. Be patient. It may take 15 minutes or so.
2. Once they're brown, take them out of the pan, letting the extra oil drip off of them. Put them on paper towels.
3. Fry the potatoes in the now-seasoned oil. Be careful, you want them a nice medium brown color. Once they're done frying, take them out and drain and salt them. Yum!
You can use the fried banana peppers on pretty much anything. I like to eat them by themselves with salt. You can also keep the oil for future use, although the French fries will absorb a lot of it.
