Fruity Vanilla Oatmeal

What you need:

1/3 cup quick cooking rolled oats
1/3 cup vanilla soy yogurt
1 tablespoon milled flax seed (or whole)
2/3-1 cup fresh mixed fruit (you can use frozen but fresh works better)

What you do:

My mom made a HUGE bowl of fresh mixed fruit for Easter, and I wanted something to use some of it up, and still follow my meal plan for eating disorder treatment.
Bring 2/3 cup water to a boil, and add the oats. Stir until almost all the water is absorbed.
Add the yogurt and stir to combine.
Add the flax seed, and then 1/3-2/3 cup fruit. Stir for a few seconds, and place in bowl.
Top with the rest of the fruit. Sweeten if desired.
You can add whatever fruit you want to this, and you can add nuts and other seeds as well. You can also vary the amount you use. This is really filling...I was full before I even finished half of it.

SO HOW'D IT GO?

I'm also suffering from anorexia, so hopefully this delicious breakfast will fill me up! Thanks for the recipe!!

Hey carobbunny!  I suffer from anorexia as well.  In fact, I am currently spending my first week of freedom from the hospital, where I spent a grueling 3 months of weight gain because I was in bad shape. It was my 3rd hospitalization since having this mentality.  I am glad I am not alone and that we can count on others for support, so if you need support I will help as best as I can since we are experiencing similiar obstacles.  I also find it really ironic that your name is carobbunny because bunnies are my favorite animals and I love carob.  I prefer it over cocoa since I try to avoid stimulants.  Remember that nothing lasts forever and to take it a day at a time.  Together, we can succeed.  ;)

You should crush or mill flax seed first if using whole. It's hard for your body to break it down, otherwise, and will generally pass through undigested.
