Mexican Brown Rice
What you need:
1 cup onion, diced
1 bell pepper, diced
2 cloves garlic, chopped
1 1/2 cups brown rice
oil, as needed
3 cups vegetable stock (I use cubes)
1 (15 ounce) can diced tomatoes, undrained
1 tablespoon chili powder
1 teaspoon oregano
1 teaspoon cumin
cayenne, to taste
What you do:
1. Stir fry the onion, pepper, garlic and rice in oil until onions are transparent.
2. Add the stock and tomatoes plus the juice. Bring to a boil, and stir in herbs.
3. Reduce heat, cover and simmer for 40 minutes, or until rice is done and liquid gone. Fluff and serve. Should be a tad sticky.

SO HOW'D IT GO?
I made this again and this time added a can of black beans to it and wrapped the mixture up in lettuce! So delicious. Next time I'm going to chop up some mushrooms to add.
I love this recipe. I switch it up by adding black beans and throw in a variety of veggies. Sometimes I use quinoa instead of rice. This is a very versitile recipe and I make this at least once a week.
I used minute brown rice and it worked just as well in less than half the time. It was so delicious! Thank you for the quick, easy, tasty recipe.
This very yummy and flavorful. However, I still like Rice-a-Roni's Spanish rice better (crazy, I know) and it takes way less time. At least I ate something tasty AND healthy.
I made this a second time last night - the first time was last year in the spring. This time I added 4 large white mushrooms for an added veggie and used an orange bell pepper instead of a red one to add some colour. I still find the overall taste slightly bland, as if it's missing something. Any suggestions? Perhaps an additional spice?
Wonderful recipe! I use about 5x the amount of garlic, and I use brown basmati rice. I use salt-free fire roasted tomatoes, and plenty of spices. Yummm!
I think mine could have used some more of the spices, but it still turned out super yummy! I also threw in some turmeric as it's a great anti-inflammatory and put the mix into tortillas and ate them that way. And I used basmati rice instead. Can't wait to make it again!
This came out Soo great. At first I thought it was going to come out watery with all the vegetable broth, and tomato , but sure enough it came out perfect. I added 1 jalapeño for a little bit of heat too. I made homemade tortillas and used this recipe as filling, they were very satisfying
This was great and really easy!! Served it with the Delightful and Easy Enchiladas off VegWeb. Which were great as well
This was pretty good... I only used 1/2 tsp oregano 1/2 tsp of cummin and added 1 tsp of curry powder.
