Strawberry Mango Crisp

What you need: 

4 cups quartered strawberries
2 cups mango, diced ( I use 1/2- 1 in. dice)
4 tablespoons sugar
4 tablespoons flour
Topping:
1 cup flour
1/2 cup rolled oats
1 cup brown sugar
1/2 cup (1 stick) margarine

What you do: 

Preheat oven to 400 degrees F.
Mix the ingredients for the fruit mixture together in a large bowl. **Never used alternative sweeteners, you may have to experiment with amounts if you do. Spread evenly into a 2-quart casserole dish. Set aside.
Mix the dry ingredients for the topping together in a medium bowl. Cut in the margarine until the mixture resembles small peas. Spread the topping evenly over the fruit mixture.
Bake for 35-45 minutes, until bubbly.
Serve warm with your favorite vegan "ice cream"
Note: I have changed the fruit in this many times. This is the original recipe, but I have made it with fresh peaches and blueberries and it was quite good. Go wild, let your imagination take over and reward your taste buds.

SO HOW'D IT GO?

this was so yummy!!!! i think i may have made the topping wrong somehow because it didnt really clump together as i expected but the flavors were so delicious. excellent recipe :>

This is in the oven right now and smells delicious!  I only had about 3 1/2 cups of fruit total (mangos and strawberries), so I halved everything else.  It all fit nicely in an 8 x 8 pan.  Thanks for the recipe!

So easy to make. I used mangoes and strawberries. Delicious. The strawberries reminded me of natural preserves and the mango was yummy. Whole wheat flour and rolled oats make such a lovely "crust". Instead of sugar I used agave nectar. This is the sort of treat you'd wish you had as a kid.  :)

I didn't have any other fruit in the house besides strawberries, so I kept it simple. The crisp turned out wonderfully and was extrememly easy to make.
