Oatmeal Muffins

What you need: 

2 cups cold cooked oatmeal (great use for left overs)
3 cups whole wheat flour
8 teaspoon baking powder
1/2 cup sugar
1 cup raisins or dry currants
1 teaspoon salt
1-3/4 cups soy milk (I used vanilla)
2 tablespoon powdered egg substitute
6 tablespoon non-hydrogenated vegan margarine, melted
2 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1 teaspoon ground ginger

What you do: 

Add half of soy milk to cold oatmeal and mix until smooth. Sift together flour, baking powder, salt, sugar, powdered egg replacer and spices. Add remaining milk and melted margarine to oatmeal. Add to dry ingredients mix until just combined. Fold in raisins. DO NOT OVER MIX OR MUFFINS WILL BE TOUGH!!! Line muffin pan with muffin papers. Fill 3/4 of the way and bake at 400 degrees for 25 minutes.
