Mexican-Style Veggie Hash

What you need: 

1 (12 ounce) package vegan chorizo (I use Melissa's)
olive oil
1 (14 ounce) package frozen seasoned okra and squash blend (I use Pictsweet)
1 (14 1/2 ounce) can whole or diced tomatoes, with juice
1 (15 ounce) can black beans, drained and rinsed

What you do: 

1. Saute vegan chorizo in a little oil until it begins to brown. Add frozen vegetables.
2. When vegetables start to thaw add the tomatoes and beans.
3. Cook until warmed through and the vegetables are cooked.
This is a great quick recipe. I like to eat it as is but I'm sure this would make a great stuffing for a burrito. I hope you enjoy as much as my omnivore family does.

SO HOW'D IT GO?

I didn't have the squash/okra blend, so I just used frozen Mexican vegetable blend and chopped up an extra zucchini.  It was so good it made me cry.  I took it to an omni party and they loved it, too.  I think this would be a fantastic filling for a tamale pie casserole type thing.
