Zucchini Corn Sauté

What you need: 

1 large onion, chopped
2 cloves garlic, minced
2 large zucchini, halved lengthwise and sliced
1 cup frozen corn (preferably fresh, if possible)
1 cup tomato/pasta sauce
1/2 cup nutritional yeast flakes
1/2 teaspoon dried basil (or 1 teaspoon fresh)
salt and pepper, to taste

What you do: 

1. Dry sauté the onion with the garlic until transparent. Add the zucchini and fry, stirring often, until half-cooked.
2. Add the tomato sauce and frozen corn. Continue to cook and stir until either the corn is defrosted or the zucchini reaches the desired tenderness.
3. Stir in the nutritional yeast, basil, salt and pepper, and serve.
This is good on its own or over bowties, etc.

SO HOW'D IT GO?

This was really good! I'll definitely make it again.

Used tomato paste and water in place of the tomato/pasta sauce.  No salt that way.  This was delicious!!  New regular dish for me.
