Terrific Tater-itto for 1

What you need: 

1 large potato (red or white)
3-4 tablespoons vegetarian refried beans
3-4 tablespoons salsa

What you do: 

1. Poke holes in the potato with a fork, and cook in microwave for 5-6 minutes, until done.
2. Let sit for a minute, split open potato and top with refried beans and salsa.
It makes a tasty yet simple meal or snack. Great for poor college students!
