Braised Collard Greens
What you need:
1 medium yellow onion, diced
2 large cloves garlic, minced
1 tablespoon olive oil
1 pound collard greens, washed, torn, and stems removed
splash balsamic vinegar
pepper, to taste
What you do:
1. Saute onion and garlic in oil over medium-high heat. When tender, add greens.
2. Stir for 2-3 minutes, then add enough water to almost cover the greens. Stir occasionally.
3. When greens are tender and bright green, and some of the water has boiled off, add balsamic vinegar and pepper, to taste.
This is a very low-fat way to enjoy a really cheap food.

SO HOW'D IT GO?
I am really surprised that I liked this so much! This was my first time buying collard greens in a frozen bag and this recipes looked like it would work....I used veggie broth instead of water, but didn't use a whole lot....and added red pepper flakes. I'm so excited to eat the leftovers for lunch!
I love how simple this dish is. Next time I'll do less water and more seasonings though.
Pretty good recipe. I really liked the addition of balsamic vinegar. I tried the recipe before I added the balsamic and it was kind of blah. Great way to get a hefty portion of calcium. thanks
:o This was the first time I have ever made collard greens on my own and they were delicious! I also added some red pepper flakes for spice and then I put the mixxture on a bed of brown rice and soysauce over the top and yum, Plus there was enough for leftovers for lunch the next day.
