Skillet Chili

What you need: 

2 Tbls. olive oil
1/2 onion, diced
1 stalk celery, diced
1 bay leaf
1 tsp. cayenne or red pepper flakes
2 tsp. dried oregano
1/2 c. tomato juice
1 c. 816]Morningstar Farms® Grillers® Burger Style Recipe Crumbles
1 can black beans, drained (or you could use red or pinto)
optional: grated soy cheese, chopped cilantro, minced jalapeno

What you do: 

Saute the onion and celery in the olive oil. When celery turns bright green, reduce the heat a bit and add cayenne, bay leaf, and oregano. Cook about 3 minutes longer. Add the tomato juice, beans, and soy crumbles. Cook until heated completely through, or until slightly thickened.
Garnish with grated vegan cheese, cilantro, and/or minced jalapeno if you like.
