Sweet and Sour Tofu Sandwich

What you need: 

1/2 yellow onion
2 cloves garlic
1/4 cup fruit vinegar (I used pomegranate)
dash of chili oil
1-2 1/4 inch thick slices of extra-firm regular tofu- pressed and dried
1 red bell pepper, roasted/broiled and peeled
additonal veggies (mushrooms, spinich, tomato, etc)
2 slices sour dough wheat bread

What you do: 

Saute onions and garlic in oil for a few minutes, then add half the vinegar. Saute until onions soften. Add tofu slices. Use a fork to poke some holes in the tofu so that the juices will infuse it. The vinegar will thicken and evaporate, make sure to add more vinegar as this happens. Saute until warmed through, or until you feel enough vinegar has been absorbed.
Assemble sandwich with remaining ingredients and tofu/onions. I like to drizzle remaining drippings onto the bread slices and grill mushrooms alongside the tofu when I make this.
This sandwich really delivers a kick to the taste buds!
