Onion Bhaji

What you need: 

Bhaji:
1 extra large red onion, coarsely chopped
1 large carrot, grated
1 big handful fresh cilantro, chopped Batter:
4+ cups flour
water, as needed
1 tablespoon salt
oil, for frying

What you do: 

1. Combine onion, carrot, and cilantro in a large bowl. Mix batter ingredients to make up a basic flour and water batter. Thick enough to stick to the onion mixture, thin enough to pour.
2. Combine batter with veggies and toss around a bit. You may need more batter. You've got enough batter when the veggies stick together nicely.
3. Heat a non-stick skillet over medium-high heat. Add enough oil to cover the pan. When oil is hot, *carefully* place a big spoonful of the mixture into the pan and flatten it slightly. Repeat until pan is full.
4. After 3-4 minutes, check the bottoms of the bhajis. When they are nicely browned, flip them over and fry for an additional 2-3 minutes. Drain on paper towels. Repeat steps 8-9 until mixture is gone.
Leftovers can be kept in the fridge and warmed up in the microwave the next day. Enjoy!

I agree with other posts on flour.  I just put in 1 1/2 cups, used a sweet onion (medium), about 10 baby carrots (ran out of full-sized) and a small handful of cilantro.  I also added curry powder and turmeric.  I just sampled one and it was amazing.  Not bland at all.  I made them for dinner so it would probably be good with something else like applesauce (latke style) maybe?  Didn't have any so couldn't do it this time.  Hmmmmmhmmmmm.

I made these again and replaced the old pic I posted with a better one!

I used a sweet onion this time and it was still pretty good.  2 cups of chickpea flour was enough to make 6 big ones.  I added garam masala and curry powder to the batter to add flavor.

These were ok.....but 4 cups of flour would have been way too much batter....I only used 3 cups and I felt that was too much.
I added a ton of spices to the batter because it was very bland.....I feel like, if the batter were made differently, they would be really good....I love onion!
