Delicious Dal
1 cup yellow mung beans split and hulled (yellow lentils can substitute)
4 cups water
2 red chiles
1/4 teaspoon turmeric
1 teaspoon salt
1 tablespoon olive oil
1/2 teaspoon mustard seeds
2 cloves garlic, chopped finely
1/2-1 teaspoon curry powder
2 tablespoons lemon juice
1. Rinse and sort the mung beans or lentils discarding any that are discolored, as well as foreign items. Put them into the water with the chiles, turmeric, and salt and bring to a boil.
2. Reduce heat and simmer, stirring often for 30 minutes. Dal should be thick, but it may be necessary to add water (1/2 cup at a time) during cooking.
3. After the beans are cooked (consistency will be like mashed potatoes), continue simmering over very low heat while you heat the oil, browning the mustard seeds, and garlic. Mustard seeds act quite a bit like popcorn when heated, so be prepared for them to leap out of the pan.
4. Remove the chiles and add the oil mixture to the beans. Turn off the heat. Add in the curry powder and lemon juice and taste to adjust spices if needed. Serve with bread (whole wheat tortillas are a nice choice), dosas, or rice and enjoy!

Awesome recipe! Modified it a bit with what I had on hand.
I didn't have any fresh red chilies, so I used dried india chilies and it came out fine. I used mustard oil instead of olive and also added fresh curry leaves (I'm spoiled as I have an Indian store nearby) while the dal was cooking.
Just wish my rice was done to go with it...... c'mon cook faster!! :>
This is seriously almost as easy as making a box of kraft mac and cheese.

I did yellow lentils. bet it would be even better with the mung beans.

This is so good. I used lentils and did not add any additional salt. It took quite a bit longer than 30 minutes to cook down, but that may have just been my burner. I was skeptical about the amount of lemon juice added, but it finished the dish just perfectly. Wonderful accompaniment to Aloo Gobi served over rice. Yum.
