Yummy Tahini Tofu Squash

What you need: 

1 package firm or extra firm tofu
1 medium butternut squash
1 tablespoon olive oil
2 tablespoon tahini
3 cloves chopped garlic (or more!)
Braggs to taste
3 tablespoon sesame seeds
2 stalks green onion

What you do: 

This is sooo tasty AND easy! Chop and peel butternut squash, steam until fairly soft. Start to fry tofu a couple of minutes before you add the squash. Add the tahini, garlic, sesame seeds and fry for about 5-10 minutes. Add green onion and Braggs to taste. Serve over rice for a more complete protein. Bon Apetit!

SO HOW'D IT GO?

Delicious!!! Love the suggestions to add ginger, and to mix the tahini with peanut butter, both of which I did. Yum!

sandyandwren - you're totally right! It's so easy and so tasty! To all: don't do what I did, just follow the directions! I mixed in the squash just after frying the tofu, but kept cooking 'til it became mushy all over the place. Despite my best efforts to ruin, it was delightfully delicious over couscous. I ate it all before I could take photos - sorry!  :D

I used summer squash and zucchini and 1/2 peanut butter and 1/2 tahini- wonderful!  i served it over fresh tomatoes (its what i had in my pantry) and it was perfect summer meal! full marks!

I am not a vegan, but recently launched on the path of discovering what that lifestyle has to offer by way of culinary delights.  My 14-year old son is a challenge in this regard.  This recipe was a success beyond expectations - we both loved it.  Incredibly delicious!  I used a bit of soy sauce instead of Bragg's, and increased the indicated amounts of tahini and green onions.  Full stars for this one.

I am not vegan or vegetarian (my fiance is) and I usually detest tofu, but this recipe is so good that even I enjoy it.

I changed this recipe using acorn squash, 1/2 package extra firm tofu, peanut butter instead of tahini, and no green onion. 

I sauteed the garlic in the olive oil before adding the tofu to fry.  It seemed pretty sticky with the peanut butter so I didn't fry it for 10 minutes.

I had this on top of quinoa and added some soy sauce.  It'd be good with some crushed peanuts on top or a bit of ginger.

Otherwise very good!!! :o
