Chocolate/Carob Mousse/Pie
What you need: 
10 oz. Sunspire Chocolate Chip (or carob chips)
2 pkgs. Silken Firm Mori-Nu Tofu
3 tbsps. maple syrup
What you do: 
Heat chips in double boiler or microwave until melted.  Add maple syrup and stir until smooth.  In a blender or processor, blend Mori-Nu Tofu until smooth.  Add the Chocolate/syrup mixture to tofu and whip until creamy.  Pour filling into Pie Crust or eat as a pudding.  Chill until firm.  Slice and serve.
Graham Cracker Crust:
Ingredients (use vegan versions):
1/2 cup melted margarine    1-1/4 cups vegan graham cracker or other cookie crumbs    3 tbsps. syrup or sugar
Directions:
Mix together and press into the bottom and sides of a 9 inch pie pan.  Bake at 350 degrees F for 8 minutes.  Chill before filling with pie mixture.
