Susans Carrot Roast
What you need:
1-1/2 cups grated raw carrots
1 cup cooked brown rice
1-1/2 cups 100% natural peanut butter
1 cup milk substitute
2 egg substitute (must stick like eggs to hold roast together)
1 chopped onion
dash of sage
dash of salt
What you do:
This is a recipe which my mom, Susan, made while I was growing up.
Mix ingredients together and pour into oiled 8X8 pan.
Bake at 325 degrees one hour.

SO HOW'D IT GO?
I found this recipe, or something almost exactly the same, in a natural foods cookbook from the seventies. I have to agree with Gilligan on this one (sorry, Dennis) - my husband and I tried a bite, then it sat in the fridge for a week til we threw it out. The only flavor to it was a faint taste of peanut butter; otherwise, it was totally bland.
