Spinach Casserole
What you need:
1 (10 ounce) package frozen chopped spinach
1/2 pound tofu
1 cup spaghetti sauce
1 small onion, chopped
8 ounces vegan cheese, shredded, divided
What you do:
1. Preheat oven to 350 degrees F. Thaw and drain frozen spinach. Drain and crumble tofu and mix with spinach.
2. Add 1 cup spaghetti sauce and chopped onion. Stir well. Pour mixture into small casserole dish and cover with half of the shredded cheese.
3. Bake for 20 minutes. Add remainder of cheese, and bake another 10 minutes. Delicious!!

Worked well. Sautéed onion, garlic and can of tomato in a pot before mixing into tofu and spinach mixture! Low calorie and nutritious as well as simple and quick <3

Considering how simple this is it was pretty good. I cooked the onion before stirring it into the mixture, and added some nutritional yeast and lemon juice. Nice recipe, but let's be honest- there is not freakin' way 8 oz and some spinach is going to feed 6 people! More realistically it would serve 2 over some pasta or with garlic bread.
I added a clove of crushed garlic, and a box of chopped mushrooms to the recipe and substituted 1/3 cup nutritional yeast instead of vegan cheese (I just didn't have any) and it turned out wonderful. I served it to my non-vegan husband with some garlic toast and he loved it. A little simple to serve without some sort of carb side, mashed potatoes, bread or noodles for sure.
This was really good. I didn't feel like chopping onion, but I did add some other ingredients and it came out really good: Used morningstar crumbles, extra sauce, roasted tomato and brown rice. Layered the tomatoes and then the rice on the bottom of the caserole dish and then added the mixture on top. Added the cheese after the first 20 minutes. The tofu was very similar to ricotta in texture, and the casserole came out like lasagna. I'm very glad that I found this recipe. ;)b

I loved this recipe! So simple to make and tastes delicious. I thought I would have leftovers to enjoy but my omni boyfriend ate it all! next time i will double it. I put more sauce in as well cuz i like things moist. It would be a great lasagna filler too. Thank you
This is SO good! I made the recipe as is, using a red onion and I tried Daiya mozz cheese for the first time, and it turned out perfectly! I usually cant stand vegan cheese but Daiya is amaaaazing, taste great and acts like real cheese when baked!
This was good! The end result was pretty onion-y, and I think it might be better if I sauté the onions to brown them a little first before I mix it all and bake it. I'll try that next time. Also, I only used half of the amount of cheese stated above, and rather than putting all of it on top, I mixed the first batch of cheese in with everything else, then added the remaining cheese on top for the last ten minutes as directed. I used mozzarella flavored cheese, and it was delicious. I think I might play with adding seasonings next time, too. I'll definitely be making this again.
This sounds really yummy! Like lasagna without the noodles. *When* I make it, I'll add garlic and herbs. Such a good idea!
