White Bean Topping (Dip)

What you need: 

1 can small white beans (goya)
1 sm red onion diced in to small chunks
1 - 2 tablespoons balsamic vinegar
1 tablespoon Rice Vinegar
1/4 teaspoon crushed red pepper (or to taste)
1/8 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons minced fresh cilantro
1-2 tablespoons of extra virgin olive oil
1 loaf of french bread sliced into 1/4 of an inch thick slices

What you do: 

Mix all the ingredients in a glass bowl except for the beans and onion. Once dressing is well combined mix in the beans and onion let marinate for about and hour in the refrigerator.
Toast the vegan french bread slices. Serve the warm toast with the bean dip on the side. Just pile the beans on the toast - it is so yummy!
You can add minced jalepeno to this to make it more spicy or add diced tomato.
