fried rice stuffed sweet and spicy eggplants

What you need: 

2 medium eggplants

1 bowl of cooked brown rice 

1/4 cup diced zuchini 

1/4 cup diced carrot 

1/4 cup diced red pepper 

salt and pepper to taste

3 tbsp of olive oil + more oil for pan frying 

1 tbsp of chopped scallion 

little bit of sesame seeds for garnish 

 

sweet and spicy sauce 

1 tbsp of gochujang (red pepper paste) -> you can buy it from korean market

2 tbsp of ketchup

1 tbsp of agave syrup

1/2 tbsp onion powder 

1 tsp sesame oil 

black pepper to taste

What you do: 

1. cut eggplants in 1 inch thick

2. take out inside of eggplants (and use it for fried rice)

3. drizzle 2 tbsp of olive oil over eggplnats and season it with salt and pepper 

4. on a hot fry pan, put 1 tbsp of olive old and saute scallion for a minute and add diced veggies and cooked brown rice and make fried rice. season it with salt and pepper.

5. stuff your eggplants with fried rice 

6. mix sweet and spicy sauce ingredients 

7. put stuffed eggplants in oiled fry pan, and pan fry stuffed eggplants

8. once you can see eggplants are soft, lower your heat and apply sweet and spicy sauce on the top of eggplants.

9. flip over the eggplants and apply the sauce again 

10. cook each side for 3~5 min and watch your eggplants, make sure you don't burn them 

11. serve with little bit of sesame seeds on top
