Culinary Schools

Hi all.
I haven't been on vegweb in quite some time, but I have a question that I thought you all could help me with.
I am thinking about going to culinary school but would like to specialize in natural/veg/vegan cuisine. Does anyone know of any good schools for this?

Hi there!
I'm finishing the Natural Chef training program at Bauman College.. I have 2 months left:

They are mainly vegetarian/vegan but not exclusively. They always provide vegan alternatives and I have been extremely happy with the program.
It is about 500 hours and they have campuses in Boulder, and 3 in Cali.
The serious alternatives are the school mentioned in New York, and there is also another similar school in Boulder.

I am in Virginia at the moment, I am serious about this so I am planning to relocate when I find the right school. I think what I am most unclear on is the actual degree you get from these schools. I am not sure how they are viewed in the culinary world, as far as legitimacy.
