My hubby and I are sharing an artichoke for dinner....any ideas what to eat with it??
(we had pasta for lunch, so that's out)

hmmmm i had potatoes for breakfast...but I DO love them so......maybe rosemary roasted potatoes.

Sharing an artichoke?! What foolishness is this! How dare anyone have to share the deliciousness that is an artichoke with anyone else! Keep it all for yourself is my advice. Heck, I buy 2 an eat them both. No need for anything else.

Seems like spinach and artichokes are happy couples. Maybe a wilted spinach salad with olives and bell peppers - Mediterranean style?

Funy, I was thinking along the same lines as Berryraw yesterday, but didn't have time to post it: a hot spinach salad with chickpeas and sundried tomatoes, or a Greek salad; maybe a nice rice pilaf, or some croquettes.
What did you have with it?

I ended up steaming some potatoes to go with it and we made lemon butter and agave-mustard dipping sauces.
