Cookie Dough Balls (III)

So yummy and easy to make. I made it in my Magic Bullet, and I processed all the ingredients minus the chocolate chips. I put the dough in a separate bowl, then pulsed the chips a couple of times to break them up. I kneaded the chips into the dough, but I needed a splash of almond milk to get the right consistency. These stay fairly soft when frozen, so I couldn't help but keep eating them out of the freezer. Soooo good.

I had never used the banana soft-serve method before--I have been MISSING OUT! So good and creamy. I really enjoyed this recipe. It didn't quite hit the same spot as a DQ Blizzard, but it certainly reminded me of the loveliness that was. I will be making this all summer.

She makes some lovely looking food.  It is all pretty easy to make too.

Chocolate Crunch Dessert Granola

I LOVE this granola. When it was just out of the oven and warm, Z said it tasted "just like a cookie." I love the addition of peanut butter to the wet ingredients--I would not have thought of that, and it adds so much flavor. It's definitely on the sweeter side, and I even toned down the sweetener from the recipe. I used 1/3 cup of sorghum (out of agave), and this was plenty sweet enough, and I actually only added 1/2 cup of chocolate chips. The recipe fails to tell you when to add the chips, so I just added them as soon as I pulled the granola out of the oven. I also ran out of coconut oil, so I ended up using half coconut oil and half coconut butter, and I really liked the results. I think it added to the richness even more. This was so easy to make and actually quite quick, too. I'm going to be making it again soon!

Chocolate Crunch Dessert Granola

I made an almond variation of this, subbing chopped almonds for peanuts, almond butter for the pb, and almond extract for the vanilla. I also cut the coconut fat to 2 tablespoons, 1 of coconut oil and 1 of coconut butter. And it was fantastic! The almond pieces tasted like candied almonds. I just loved this variation. I stuck with 1/3 cup sorghum and 1/2 cup chocolate chips for this one.

Sweet Potato and Lentil Salad

I didn't love this as much as I wanted to. I actually thought it was lacking quite a bit in flavor, so I ended up using more dijon mustard in the sauce, then throwing in some peas and red wine. It was better the next day (as expected), and it was pretty good cold. However, I think I would prefer the lentil salad from The Vegan Table in the future, but now I know I really like the addition of sweet potatoes and peas. Not a bad dish at all, just not amazing.

Gooey chedda cheeze: Yummy. If I make it again I will omit the miso, I'm not too fond of it.
Zucchini Fritters: They were ok. Probably won't make again, it wasn't worth the effort.

Seitan & Broccoli With Pantry BBQ Sauce: Incredibly easy, versatile and tasty. The BBQ sauce is the best ever! I had it with spagetti, next I'm gonna try it with mashed potatoes or rice.
Spaghetti-Nos With Mini Lentil Meatballs: I just made the sauce and had it with Vcon bean balls. My new favorite! I'm gonna use it a lot in the future, maybe in lasagna! Can't wait to try the meatballs too.
Ethiopian Spicy Tomato Lentil Stew: A lot of spices, not very flavourful. Maybe that was my fault because I use tinned tomatoes.

Vegan Dad

Creamy cajun rice: Very nice. Added homemade seitan chorizo. Next time I won't add any seitan to the rice, just have it (or something else) on the side.
Creamy mac and cheeze: This rocks! I've made it several times and like it better without the miso. It doesn't taste very cheesy, but it's creamy and delicious.

Vegan Mouse

Mock Guacamole: Sounded interesting with a "guacamole" made with green peas. It didn't work very well though. Too sweet, it didn't taste anything like guacamole.

Vegetarian Times

Ultimate Vegan Lasagna (http://www.vegetariantimes.com/recipes/10851?section=): One of my favorite lasagnas. Tofu + cream cheeze + sausages + roasted red pepper sauce just can't go wrong.

Peas and Thank You

“Cheese” Stuffed Bean Burgers: It was a nice idea and I may use it for future burgers but I won't turn to this recipe again. It lacks spices and the burgers turned to crumbles after they'd been frozen.

In A Jiffy Spelt Veggie Burgers: Too much flour. With some tweaking, they have the potential to become really good.
Baked Vegan Mac ‘n Cheese: It's a variation of the VegNews mac & cheeze recipe, and I like it way better than the original. It's a creamy and comforting pasta bake. The sauce is more alfredo-ish than cheezy. Will absolutely make again.

I was a little hesitant to try this, thinking it was going to awesome or awful. Since it doesn't use any expensive ingredients, I went for it. And boy am I glad I did! This is absolutely epic. I was eating it off the spoon, Nutella-style. I was trying to find a bean-y flavor, looking for it, and I still couldn't detect it. There's just too much other goodness going on. I'm going to put this on everything! Few tips: I used just 2 tablespoons olive oil, and that was enough fat, but I did need to add a bit more liquid (I used almond milk for more creaminess). Also, I made this in my Magic Bullet, and next time I will grind up the chickpeas first, then add the rest of my ingredients. This will get it a bit smoother. MAKE THIS!

Well, where are the recipes? Like in magazines? We don't have a thread for that yet! If you look at the top of the cookbook, loot, and dine n dish forums, there's a sticky thread for "review thread directory." Those have all the review thread links in them.  ;)b

Healthy Vegan Recipes

I believe the author and chef is a member on here but I dont know her username offhand.  I found her blog from this site.  She has some simple but tasty and elegant recipes that are relatively easy and inexpensive to make.  As a newer vegan I find her recipes less intimidating than some because they dont involve a lot of "weird" ingredients.

Both were filling and tasteful and not hard to make at all.  I also like that she has videos showing how she makes the food which can be helpful if you are not familiar with certain cooking terms or what something should look like.  She seems very likeable and friendly.  Anyway, just thought I would share.

Danishes
The danish dough was kind of soft, but workable. In the end I liked the pinwheels better than the schnecken shape, since twisting the dough caused some tears, whereas the pinwheel shape didn't put much stress on the dough. I used boysenberry jam for the fruit part, and despite my desire to be lazy after laminating all that dough, I went ahead and made the hot sugar glaze and frosting. They were really good, crispy, and sweet, and fared well in the freezer and fridge.

Puff pastry
This was easier to make than the other doughs, mostly on account of there being no rising. I was able to do lots of laminations without the dough tearing through to the margarine layer, and the result was a super flaky, delicious pastry. He mentioned to trim the edges of the dough, but I ignored this. I realized why that was supposed to be done after baking, since the folds on some of the edges won't allow proper rising. It was still tasty though.

Chocolate and Strawberry Napoleons
The strawberry layer firmed up well, and I added the contents of a vanilla bean to make it extra tasty. The slices of the gel wound up being a bit bigger than any of the puff pastry pieces, but it didn't matter too much. I couldn't get the coconut cream too firm, maybe it just depends on the fat content of what you're using (the cream from the can I was using was still fairly liquid to begin with, but I've seen some cream from fattier coconut milk that's practically solid). So it was a little drippy, but not too bad.
It came together pretty easily, and we were able to eat them sandwich-style without having to pick up too much with a fork. Next time I'll probably use straight jam instead of gel, since it's easier, though the gel was fun to make.
