Non-frozen tofu

What do you make with it?! I usually always freeze my tofu, and then think, "Oh, I wish I hadn't frozen my tofu, so I could make ____." Now, I can't remember what those things are. I've thought of/made scrambles, fritattas, and those kinds of things....what should I make?

I don't really want to do an "egg" salad. I want something new! It's regular, firm tofu.

I'm the opposite, AC.  I almost never freeze my tofu. I just use it drained and pressed for everything.  I love marinating and grilling firm tofu.  Last week, I made an awesome grilled veggie and tofu sandwich with italian marinated tofu, eggplant, zucchini, red bell peppers, red onions, and portobello mushrooms with pesto mayo on cracked wheat sourdough.

I don't usually freeze my tofu. I just have a little bit frozen in a freezer bag for if I make general tao's tofu...otherwise it's all fresh....seems easier to use in this form for me

Sauces, pie fillings (though, thats generall soft or silken)
Tofu burgers?

BBQ, stir-fry, that awesome quiche found on here, pretty much anything you want to make with it.

I like baking firm unfrozen tofu...it gets an awesome chewy texture.  I find baking defrosted tofu doesn't work quite the same, it gets sort of dried out.  Also mashed baked tofu makes for great sandwich fillings...I baked tofu in a Thai peanut sauce and then mashed it, added some more sauce and seasonings and used it as a sandwich filling...so unbelievably good.  I need to write a recipe for that and post it on here!

I hate the texture of tofu after it's been frozen.  I use tofu in the fresh form for everything

Everything. I too dislike frozen tofu. Besides what I can get here just crumbles after it thaws. I press it a bit, and make my favourite thing, Tofu and Veggies with Couscous...or just whatever. Press not freeze is my motto.

I didn't even think about the fact that a lot of people don't like it frozen, regularly. I'll probably end up making another scramble, or maybe I'll try baking it. I'm just so accustomed to freezing it!

I do realize that I can make anything with it, though.

make tofu peanut butter spread! just stick the tofu in the food processor, but as much peanut butter as you like, some raisins, some agave nectar, or whatever kind of sweetener you like, and blendddd...its the most delicious thing ever to eat on anything!

the broiled tofu from vcon is awesome & easy.  it barely needs to be pressed, too.

I really love tofu ricotta--
a defrosted, drained bag of spinach,
a drained, crumbled block of tofu
spoonful of white miso
spoonful of tahini
salt and pepper
chopped basil (or dried)
red pepper flakes
1/4 c. of nooch

I kinda ripped this recipe off the side of the silken tofu box, but I've made it with medium or firm regular tofu. My roommate puts it on crackers, but I eat it right out of the bowl. I've also made lasagna with it once.

You can stuff wonton wrappers with that mixture, top with tomato sauce and bake...bllisssssss.

ACTUALLY, I just read your post in chitchat, and I decided to try that recipe (jake's)! I was thinking I had tried, and not liked it..but maybe not.
