I've volunteered for 'cake duty' for my kiddo I nanny who's gluten/dairy intolerant/sensitive. I think I've found a few decent cake recipes/flour subs to play with....but what I just realized I needed was a frosting recipe!!!
Any suggestions???
The plan is to make a cake in the form of cap'n hook's pirate ship!!! ARRRRRRRRRRRRRR!!!
I just made a major batch of frosting over the weekend for a huge party! I couldn't find my butter creme recipe so I winged it. I used one cup of EB, if you want a WHITE frosting use Spectrum solid vegetable shortening, one bag of powd sugar, more if it is really humid or it seems too moist, a tablespoon or two of vanilla, and about 3 or 4 tablespoons of non dairy milk, or juice. I used my food processor, have also used a mixer, start the "butter" and slowly add the sugar alt with the liquid. It worked great. For chocolate frosting I added about 3/4 cup of cocoa powd to the butter and mixed, then added the sugar and milk.
I just googled "pirate ship cake" and found tons of great ideas on how to put one together!
I am too looking for a cake idea for Lilah, she turned one yesterday and we are having a "Pizza party for the Princess" this Sunday so I need a princess cake, but not Disney related. Still working on that one.
If you need a definite recipe, I would google "butter creme" and just sub out veg butter and milk.. That is how I got my basic recipe.
a good way to do a princess cake, is to simply bake the cake in a bowl. when it is done baking, you turn it upside down and have the skirt to decorate!! then you can add any 'princess' doll you want by simply inserting it into the cake!! (You want to first wrap the legs up in plastic wrap before insertion though!) I have pics of the non vegan 'angel/fairy' cake I made for a friend on FB....I'll load them up here if you want to see what I'm talking about!
