Christmas dinner

It's my husband's and my first christmas away from our family, just the two of us (since we just moved) and I have no idea what to make for christmas dinner. Our family is huge, so it was always food for a multitude, so.
Any suggestions? What are you guys having?
I'm not sure of everything but I want to make my brown rice casserole. Start with a cup of partially cooked brown rice, still very firm. Saute onions, red bell pepper, garlic and celery until it collapses a bit. Put it in a baking dish. Mix in a cup of broken pecans or walnuts, half a cup of dry sherry and a cup of "beef", "chicken" or vegetable broth. Cover and bake until the liquid is absorbed.
Like you I am used to cooking for a crowd for holidays. I usually end up making things I can freeze the leftovers of sucessfully.
I am thinking of making some type of soup since I am the only one that eats my cooking.

It's my husband and mine's second Christmas away from our all vegetarian family that always cooked up an awesome and large meal. As gluten-free vegans we have coped, but I can understand missing family. Some Xmas or holiday dinners we have made for the two of us and based on recipes we modified from this site:
- vegan shepherd's pie with nutritional yeast gravy
- baked breaded tofu steaks with roasted vegetables and mashed potatoes, again with gravy
- chana masala with sweet peas and mashed potatoes or rice
- baked potatoes with a red dhal topping
We also always make a huge salad with homemade dressing.
A great drink too if you don't drink alcohol is sparkling organic grape or apple juice that comes in wine-type bottles.
For dessert, we make gluten-free and vegan sugar cookies with vanilla icing or we've had frozen berries with a vegan whipped cream.

I'm doing a Mexican holiday dinner this year, complete with margaritas for the drink! I've got the sides and appetizers figured out, I just need to work on the dessert...
For Christmas Eve, we always do tamales, beans and tortillas, and red chile. For Christmas we have lasagna and salad. Everyone is always full and happy.
DalVeg, for a traditional Christmas Mexican dessert, make biscochitos. Yummy!
I'm doing an Italian themed X-mas this year.
I think I'll do veggie lasagna, pasta carbonara, salad and bread.
I cook for 8-9 omni's. Last year was Asian, so I thought I'd change it up a bit.
Hubs wants Indian food, so I guess I'm cookin up some dal and basmati for Christmas. It's weird though I've only ever had veganized versions of holiday traditional foods for holidays. It will be the first themed holiday!
i want to try one of those celebration loaves or try to make some seitan type loaf for the meaty dish, mashed potatoes (boxed) and gravy (packet), stuffing (pepperidge farm), gma will supply the salad and i will make the vegan ranch dressing/ dip for appetizer veggies, 7 layer dip for appetizer, and def a pumpkin pie "cheese" cake :)

I am still trying to figure it out. This is my first Christmas away from my family and I usually cook and bake up a storm, but here I have no oven, only two pots and one crappy hot plate. I think several of the European students plus us are going to get together and celebrate with a Christmas dinner. Of course, everyone wants what is traditional in their own families, unfortunately, Western cooking basics for things like that are expensive and hard to find. The plan is for everyone to bring a dish.
I just need to figure what to cook and if I want to do something psuedo-Chinese with the ingredients I can get easily here or if I want to go the Western route. Then I need to figure out what I can cook here. For dessert I am thinking of making "Chinese" donuts like you get at Chinese buffets. I will have to go a little out of my way to find baking powder, but I think it will be worth it. I can set my hot plate to certain temps, so I think I can keep my donut oil at the right temperature this way. The last thing I want is a grease fire.
I have feeling though that I will end up making either Mac and cheese or General Tso´s Tofu. I have so far not met an Omni that did not like the General Tso´s tofu.
I have the tendency to cook like a fiend on the holidays, so I'll be cooking from about 6am till 7pm for my party (44+ people). I'm planning to do:
-Tofurky with gravy
-Tamales
-Noodle kugel
-Dilly mashed potatoes
-Coconut sweet potatoes with ricemallow toping and macadamia nuts
-Brussels sprouts
-Green bean casserole
-Corn bread
-Squash soup
-Roasted root vegetables
-Sauteed mushrooms
Dessert is going to be:
-Pistachio brittle
-Fudge
-"Peppermint Patties"
-Gingerbread cupcakes
-Stuffed dates
-Pears poached in pomegranate juice
I know, I'm a crazy person. But I do something like this every year. :)
We alas, are not doing Indian food. We've decided on sushi (hubs is a trained sushi chef *swoon*) and miso soup, and we shall invent vegan gluten free tempura!
We're going with either Caribbean or Cajun foods for my family get together (which will be post-holidays). I'm still looking for good ideas for both, but want to keep it simple since I'll be doing all the cooking for it. Any suggestions are welcome:)
For the actual Christmas potluck I'm bringing carrot cake and a wild rice salad, both recipes from vegweb.
I'm modifying this http://vegweb.com/index.php?topic=4527.0 to make a stuffed portabellini casserole... made a smallish version a bit ago, & it was yum; the 'bellinis are stuffed w/ rice, onion, bell pepper, garlic, bread crumbs, & fresh basil & oregano.... mmmmmmm....
Also, doing chocolate-peanut butter pie & vegan cheesecake with blackberry sauce; family's bringin' sides.
Ok, I've made myself hungry now.... gotta go see what's in the fridge!

Appetizer: Kalamata Olives and Stuffed Mushrooms
Bread: Homemade Garlic Bread
Salad: Italian Salad
Soup: Vegan Zuppa Toscana
Veggie: Stuffed Zucchini Boats
Side: Alfredo Farfalle with Spinach and Carmelized Onions
Main: Lasagna Love Potion
Dessert: Chocolate Almond Kahlua Cake, misc cookies and chocolate truffles
Can't wait to eat it all...
