Today I substituted black-eyed peas instead of garbanzos in this dish and it came out delicious. A bit creamier, and a lighter flavour.

Well, the use-uncooked kind, yes. But Shelloid says if you have plenty of sauce in the dish and cook it uncovered for 45 min you can use regular noodles as well.

Works well with oat flour instead of regular flour. Comes out a little denser, but works well.

If you don't have them or don't like them, you can just leave them out and add a bit more masala. Once I mistakenly used kalonji seeds (which are also black) and it was fine.
