Delicious recipe!! Tasty and fluffy. Only the first one was less than pretty (but still tasty). I only had a cup of almond milk, so I filled in the rest with water.
KT22A added a comment on the recipe Smoky White Bean Quesadillas:
yum, a hit with omnivores and vegans alike, and the leftover bean sauce is great for dipping veggies in! 5 stars. it reminds me of smoky hummus, though it is slightly cheesy. I used a 15 oz.

this is super yummy and easy! I didn't have any sweet potato, so I used extra squash (butternut) to fill in for it. I love roasting the veggies first - really adds to the flavor!
KT22A added a comment on the recipe Summer's Comin' Avocado, Mango, Lime salad:
Yum! This was fresh and had a great mix of flavors. Loved the sweet and tangy taste from the lime juice and sugar. I ended up sauteeing the jalapeno and bell pepper (green one) with the corn.
KT22A added a comment on the recipe Quinoa and Couscous Salad:
This is delicious! I made it for a picnic  and everyone loved it. I used 4 cups of cooked brown rice for both grains (what I had) and left out the grated raw zucchini because I found it bitter.

Love this recipe!! What a great fruit salad. I did use some substitutions:
-Blueberries for grapes (on sale!)
-Tangelos for clementines
-Maple syrup for agave nectar

this was DELICIOUS! I followed the recipe exactly, except I only used half an ounce of red food coloring. it still turned out a nice deep pink color, though.
KT22A added a comment on the recipe Seitan Satay:
This was delicious! I served it at an X-men party. It was supposed to be something Wolverine would bring, since it's "meat" on a stick (like a claw) and an Asian dish, bub.
KT22A added a comment on the recipe Feel Good Kale Sauce with Pasta:
I made a double recipe and added a 16-ounce can of tomatoes. It WAS quick and easy. I didn't like it much, but my partner did.
These are delicious; I will definitely make them again. I skipped the baking step because I was too hungry and just pan-fried the patties.
