Me and my hubs really liked this! Very easy to make and very tasty! The only thing I added was black pepper. Served it up with some foccacia bread and a salad!

loved this tasty and easy to make dish. I actually subbed zucchini for the celery and doubled the veggies, too.
I also doubled the beans by adding a can of black beans!

Okay, so I doubled the amount of tortillas the last time I made this and they still became mush, BUT, not as mushy, so, the more the better. I'd double the tortillas on each layer next time.

yummm, and so easy. I didn't have any red bell and I added chili powder, and garlic powder to the bean/corn mix. I used regular flour tortillas and served these up with quacamole and salsa.

WOW, this was so good! I put it on some quinoa pasta and mixed in some steamed kale, peas and zucchini.
