So very good! I followed the recipe pretty much exactly - except used regular shitake mushrooms (not dried) and kale instead of bok choy. Such a unique recipe - definitely a keeper.
This was so easy to make and tasted great. I actually added chili powder instead of chili pepper. I added some lime juice. And I did one can black beans, one can of pintos.
>WOW< so glad I found this recipe. It was yum! The only things I did differently is used NO oil and added dried basil. I mashed up the eggplant as nomeatpete suggested.

These were good. I followed the recipe exactly, except I sauteed some onions instead of the dried minced onion, and I didn't have any scallions. They turned out tasty! Thanks for sharing!
